Ayam Percik

Ingredients
  • 200ml Coconut milk 
  • 1kg Chicken Drumsticks 
  • 5 stalks Lemongrass, white part only, chopped 
  • 80g Shallots, chopped 
  • 4 cloves Garlic 
  • 3tsp Fresh Turmeric powder 
  • 20g Fresh Ginger, skinned & chopped 
  • 4 Red chillies 
  • 3 tbsp Coconut Oil 
  • 1/2 tbsp Salt 
  • 1.5 tbsp Sugar 
  • 1 tsp Fish sauce 

Method
  1. Blend lemongrass, shallots, cloves, ginger, chillies, coconut oil, turmeric powder, salt, sugar and fish sauce to create a marinade. 
  2. Brush the marinade on the drumsticks on the chicken. 
  3. Bake the drumsticks in 180C preheated oven. Every 10 minutes, turn the drumsticks and brush more marinade. Baked until cooked through or at least about 40 minutes.
